Last Minute Recipe

If you’re anything like me and love a good theme and any excuse to bake up a storm, here’s a little hack. I’ve always wondered, but now I know for sure it can be done: Making shamrocks out of hearts. Now before you go and think you’re eating three cookies instead of one, let me assure you I used a very small cookie cutter and rolled them out fairly thin.

Instructions

All you’ll need is the bare essentials:

• Standard sugar cookie mix of choice (egg, oil, milk, butter, etc. You know the drill.)
• Green food coloring, obviously
• Powdered sugar
• Sprinkles optional
• Heart-shaped cookie cutter
• Rolling pin or similarly cylindrical object

Of course, I would have loved to own a shamrock-shaped cookie cutter, but it’s the thrill of the improvise that keeps me on my toes. I considered using mint flavoring, but ultimately opted against it. There are plenty of St. Patrick’s Day recipes involving mint.

First, mix up your cookie batter.

Then dust a cutting board with flour as well as your rolling pin and roll out the dough. Cut out a bunch of little hearts.

Gently layer them on top of one another in 3’s or 4’s in the shape of shamrocks.

Then bake those babies up!

They stick together wonderfully. Careful not to overcook.

Ice liberally.

Add some pot o’ gold sprinkles maybe?

And you’re golden!

Perfect for any last-minute St. Patrick’s Day party or potluck. I’m also thinking about some green tortilla chips with hummus or dip to, you know, balance things out. Add some healthy.
